It is a hard cheese from 100% fresh goat and sheep pasteurized milk that we collect daily. It matures for at least three months in our ripening plants under ideal humidity and temperature conditions. It is characterized by rich aroma and light salty taste. It accompanies your daily table perfectly. It is used in cooking, either grated on your pasta or as a frying pan, while it can ideally accompany your wine. It does not contain gluten.
